Today I am going back into my family’s recipe history.
We are making Cottage Cheese Casserole!
Don’t be frightened…here is why I chose this recipe to make:
Cottage Cheese Loaf
Ingredients:
- 2 lbs. small curd Cottage Cheese
- 5 eggs
- 2 onions {chopped}
- 3 pkg. George Washington Broth {or other vegetable broth seasoning}
- 1/2 c. oil
- 1 c. pecans {chopped}
- 1/2 c. milk
- 8 c. Special K cereal
- 1 1/2 c. grated cheddar cheese
Directions:
I start by putting the onion in the food processor to make it more of an onion sauce. I then chop the pecans in the food processor until they resemble sand.
I add the onions and nuts to all the other ingredients in a VERY large mixing bowl.
Believe me, you want this bowl large.
Stir it up until it is as blended as these ingredients will get. Mine looked like this:
Spoon it into a large pyrex dish prepared with PAM. This recipe is notorious for post-baking pan adhesion {I totally just made that up}, so this is a very important step if you don’t want the baking dish soaking for weeks in your sink.
Bake at 375 degrees. If you have a casserole that is 1 1/2 inches thick, it will take about 45 minutes. If it is deeper, then an hour will work.
Mine took an hour.
Use a spatula to cut out Cottage Cheese Casserole squares.
I took this picture, walked out of the room for 2 minutes and when I returned my husband had eaten the entire “row”!

A-ha!! This is also a recipe in MY family recipe box. I like to use sliced almonds instead of pecans, but the pecans DO make it yummy! I love this recipe and it’s the best stuff ever!! I make a double recipe about every week and it gets eaten up as soon as I get it out of the oven. I will have to try the pam spray, first though. I’ve got a pyrex soaking in the sink as I type. Next time!! I’ve also substituted corn flakes when I didn’t have any Special K and it worked out just fine. This can be used as a main dish with potatoes, green beans or broccoli and a salad as sides. DELICIOUS!!! Seriously, y’all gotta try it.
